Chicory - Red Dandelion
Chicory is a perennial herbaceous plant of the dandelion family Asteraceae. Red dandelion has a hard red stem and green leaf. Many varieties are cultivated for salad leaves as it's wonderful in salad when dressed with a gutsy, garlicky vinaigrette. It can also be added to a stir-fry, a quick saute. A dense, crisp texture and a bittersweet flavour (peppery finish) that’s deliciously raw or cooked. Rich in potassium and magnesium.
Planting Info
Full sun-part shade. Space seedlings 30cm apart. Deep, fertile soil, mulch with an organic mulch such as sugar cane or pea straw and water in well. Harvest leaves as they grow or the entire plant after approximately 2 months.
