Winter Tarragon Stuffing for Roast Chicken
Organic or free range chicken
Fresh Winter Tarragon
Salt and pepper
Extra virgin olive oil
Prepare the chicken for cooking as per the instructions.
For the stuffing, fry the chopped onion and several cloves of minced garlic in 100g butter until soft. Add this mix to 2 cups of breadcrumbs, half a cup of grated parmesan and a cup of chopped fresh Winter Tarragon. Season with salt and pepper and mix thoroughly.
Spoon mixture into the cavity of the prepared bird and cook as per the instructions.
