Grilled Herb Zucchini

My family love grilling zucchini on the BBQ. It's such an easy cook side dish whilst the BBQ is on and everyone loves it - BONUS! *TIPS - Brush herb mixture on prior to putting on grill, it gives a nice smokey flavour. A delicious herb combo is Rosemary and Summer Savory. INGREDIENTS: Fresh herbs of your choice (chopped up) Medium - large sized zucchini (sliced length ways) Olive Oil Salt & Pepper

METHOD: Put chopped herbs into olive oil and stir through. Put sliced zucchini's on a large plate Using a cooking brush, brush the mixture onto the zucchini's Grind some salt and pepper over them Cook to your liking and serve.
