These scrolls are terrific for lunchboxes or after school snack. You can add pretty much anything you like. We (of course), love fresh herbs and with lots of cheese! 🌿 *TIP - Instead of tasty cheese, a soft cheese like Feta, Ricotta or Goats cheese is yum!
INGREDIENTS: 2 TBS of Fresh Parsley, Thyme & Oregano (chopped up) Puff Pastry Sheets Olive Oil Cheese of your choice (Tasty or Parmesan etc) Salt & Pepper Optional - Chopped onion/shallots METHOD: Lay out your puff pastry sheets, leaving the backing paper on so they don't stick. Pre-heat oven to 210 degrees. Combine majority of herbs and the salt and pepper with olive oil and mix slowly together, leave some herbs remaining and spread these over separately. Leaving approx 1cm gap around the edged, spread olive oil mixture over each sheet of pastry with a cooking brush, top with the extra herbs. Spread your chosen cheese over the top of the herbs. Roll up the sheet of pastry, taking care to keep the mixture inside. Use a sharp knife to slice the pastry carefully into approx 2cms thick rounds. Place each scroll onto baking tray that's lined with baking paper and some spray oil. Leave some room in-between for pastry to puff up. Cook for 15-20mins or until puffed and golden, cool and serve. *Can be stored in air-tight container for up to 3 days.
